Who do you respect as chefs? People who shaped the way we eat like Point and Escoffier? People that changed the definition of an amazing restaurant, such as Thomas Keller or Alice Waters. How bout someone who made ” fine dining” accessible to the home cook, like Julia Child or Graham Kerr. I bet for most of America it would be someone the Food Network jams down our throats like Bobby Flay, Rachel Ray or Emeril (who back in the day was actually one of the best in the game). Me, I have a more simple answer. For me it’s the man who dedicated every moment of his life for years in order to be the best. Marco Pierre White. Not the man on that lame, cancelled early, hack of a television show. I’m talking about the youngest person ever to win 3 michellan stars, the man who trained Gordon Ramsay and Heston Blumenthal before they had some of the best restaurants in the world. If you have never read Devil in the Kitchen, you should. Only a true badass would work his ass off to get the top reward in his field and then give it back because he thought it was bullshit. Don’t get me wrong I think guys like Thomas Keller and Ferran Adria changed the definition of the word food, but their commitment to the game is not what Marco’s was.
