Number one rule as a cook, take care of your dishwashers. Not only are they the hardest working and underpaid people in a restaurant, but they will save your ass when it needs saving. Think it’s hard work to get your ass kicked on the line Saturday night? It is, but try slangin pots and pans on Saturday, it sucks. Some of the best cooks I have ever had the pleasure to work with were dishwashers. Im not talking about finesse but volume for sure. One of the greatest things about most dishwashers is their amazing ability to turn any item in a kitchen into a makeshift penis. From ice wands, to ladles, to carrots and pork loins. I have even seen a sheet pan dick grind away in my time. Dishwashers make the world go round, hook em up with a steak once in a while.
